On April 27th, it's King's Day again! That's when we celebrate the birthday of the Dutch king. Traditionally, many people enjoy a tompouce on this day, a delightful pastry with layers of puff pastry and cream. This treat is actually our own version of the French millefeuille, which means 'thousand leaves'. Normally, it has a pink top layer, but during this festive day, they are often found in orange.
